A LITTLE BIT OF TIME IS NEED TO CHOP AND PREPARE INGREDIENTS BUT THIS IS SO YUMMY AND SIMPLE AND FREEZES WELL
 
INGREDIENTS 
 

  • 1 400ML CAN OF COCONUT CREAM
  • 2 400ML OF COCONUT MILK ( CHECK THESE FOR NASTIES CHOOSE THE ONES WITH NIL PRESERVATIVES ETC )
  • 800 GRAMS DICED SKINLESS CHICKEN THIGH
  • 2 RED CHILLIES (CHOPPED FINELY -SEEDS IN IF YOU LIKE IT HOT, SEEDS OUT IF NOT )
  • 1 THUMB OF FRESH GINGER (GRATED)
  • 2 CLOVES OF FRESH GARLIC (CRUSHED)
  • 2 RED ONIONS (SLICED)
  • 1 BUNCH CORIANDER (WASHED AND ROOTS REMOVED- SLICE UP ROOTS  AND STEMS, SET TOPS ASIDE FOR GARNISH )
  • 2 TABLE SPOONS OF CLEAN CURRY POWDER (I USE BANABAN MEDIUM FROM NATURE PACIFIC, CURRY TRADERS ALSO MAKE A NICE BLEND. IF BUYING FROM THE SUPERMARKET CHECK FOR NASTIES EG WHEAT AND PRESERVATIVES )
  • 1/2 A SMALL JAP PUMPKIN (PEELED AND CUT INTO THUMB SIZE CHUNKS DRIZZLE WITH OLIVE OIL AND ROAST ON 160C UNTIL JUST TENDER )
  • 2 TABLE SPOONS COCONUT OIL
  • 1 CUP NATURAL CASHEWS
  • SALT AND PEPPER ( I USE PINK HIMALAYAN SALT )

 
METHOD 
 

  • IN A LARGE SAUCEPAN ADD COCONUT OIL AND SEAL OF CHICKEN UNTIL JUST STARTING TO BROWN REMOVE FROM THE PAN AND SET ASIDE.
  • INTO THE SAUCEPAN ADD THE COCONUT CREAM LET SIMMER IN MEDIUM HEAT STIRRING OCCASIONALLY UNTIL IT BEGINS TO SEPARATE AND THICKEN SLIGHTLY.
  • ADD IN CHILLI, GINGER, GARLIC, CORIANDER ROOTS AND STEMS  AND ONION STIR FOR ABOUT 5 MIN UNTIL ONION IS TENDER STIR IN CURRY POWDER STIR FOR 1 MORE MINUTE.
  • ADD CHICKEN BACK IN PAN AND COCONUT MILK HEAT UNTIL SIMMERING, SIMMER FOR 5 MIN STIRRING OCCASIONALLY.
  • STIR IN CASHEWS AND ROASTED PUMPKIN
  • SERVE BY ITSELF OR ON QUINOA. SPRINKLE WITH FRESH CORIANDER .

 NOTES
 

  • IF YOU LIKE A THICK CURRY YOU CAN THICKEN WITH ARROWROOT PASTE ( 1 TABLE SPOON ARROWROOT 2 TABLE SPOONS WATER )
  • CAN BE MADE WITH LAMB JUST INCREASE THE SIMMER TIME TO AROUND 40 MIN AND ADD AN EXTRA CAN OF COCONUT CREAM.
  • CAN USE SWEET POTATO INSTEAD OF PUMPKIN IF YOU PREFER
  • SAVE TIME AND ASK YOUR BUTCHER FOR DICED THIGH SAVES CUTTING UP YOURSELF. (ALWAYS CHOOSE FREE RANGE CHICKEN ORGANIC IF POSSIBLE )
  • I STIR IN BABY SPINACH JUST BEFORE I SERVE FOR A HIT OF GREENS :)
